weekend eats.

hello! i hope you all had a wonderful weekend. it was a busy one over here, but a great weekend overall.

i decided to start a weekly new series where i can share some of meals i plan and the recipes i try, and then document how it goes. and i hope you’ll share some great recipes here, too!

this weekend, i made pasta salad (*which I adapted from The Whole Foods cookbook. you should check it out because it’s awesome).

i used brown rice noodles from trader joe’s, and just cooked them according to the package. make sure to run cold water over them when straining. it keeps them from cooking further, and helps cool them off quicker.

photo 1(2)   while i was waiting on the pasta to cook, i cut up all my veggies. i added carrots, squash, olives, spinach, tomatoes, onions and sun-dried tomatoes.

photo 2(1)i let the noodles and veggies cool in the fridge for about an hour before i mixed everything (because i wasn’t in a rush and i prefer my pasta salad cold). after they cooled, i mixed everything in a big bowl and added some organic feta.

in a separate bowl, i mixed extra virgin olive oil, balsamic vinegar, italian seasoning, oregano, red pepper flakes, parsley, rosemary, and salt & pepper for the dressing.

photo 3(2)drizzle the dressing on top, mix, and viola! it’s pasta salad. simply and easy. and quite delicious.
